A Treatise on Adulterations of Food, and Culinary Poisons: Exhibiting the Fraudulent Sophistications of Bread, Beer, Wine, Spiritous Liquors, Tea, Coffee, Cream, Confectionery, Vinegar, Mustard, Pepper, Cheese, Olive Oil, Pickles, and Other

by Accum, Friedrich Christian

Lion's Mark Library edition.

Imagine purchasing a loaf of bread, a bottle of wine, or a jar of pickles, only to discover it contained substances not only unexpected but potentially harmful. This unsettling possibility, once a widespread reality, is the subject of Friedrich Accum’s *A Treatise on Adulterations of Food, and Culinary Poisons*, a vital and surprisingly readable document from the early nineteenth century. In an age increasingly concerned with transparency and authenticity, this work offers a stark reminder of the vulnerabilities inherent in food production and the importance of consumer vigilance.

About the author: Friedrich Christian Accum (1769–1838) was a German-born chemist and author whose career spanned both Europe and the Americas. Trained as a pharmacist and later working as an operative chemist – a role combining laboratory work with industrial application – Accum possessed a unique understanding of chemical processes and their implications. He initially gained recognition in Germany for his contributions to the field of analytical chemistry, but his outspoken criticism of the Prussian government led to his exile in 1818. This relocation brought him to Philadelphia, where he found a receptive audience for his concerns about food adulteration.
